Cacciatore is a pork sausage that is air-dried, cured and fermented and is made using natural casings. Because it is not smoked it takes longer to cure, resulting in a sublime sausage where no flavours have been masked by smoke. In the final stage, the Cacciatore is rolled in white pepper giving it a distinctive look and peppery zing.
